The unique Kimmeridigan soil coupled with minimalist winemaking practices imparts a character on Chablis that is unmatched by any other chardonnay worldwide. William Fevre has been at the forefront of wine production in Chablis, combining traditional winemaking practice with modern techniques to produce wines of outstanding quality and clarity.

 

With 2008 burgundies just around the corner we are heavily discounting our 2006 William Fevre’s. In most cases we only have a couple of bottles available and are sure to go quickly!

We will have two of the William Fevre Premier Cru’s on tasting this Saturday alongside a couple of great Sancerre’s, perfect for this heat!

 

2006 William Fevre Chablis Le Clos
Usually $155.50 / Now $114.99
An airy, expressive and ultra refined and pure nose trimmed in very subtle wood notes offer up aromas of white flower, quinine, saline, minerals and seashore nuances that give way to rich and robust, indeed huge flavors that are perhaps a bit less refined than those of the Valmur or Preuses but there is another dimension here of depth that more than compensates. A great wine with a long future that should develop slowly yet because of all the mid-palate fat, be enjoyable young. BURGHOUND

 

 

2006 William Fevre Chablis Bougros Cote de Bouguerots
Usually $141.99 / Now $104.99
As it always is, this is more elegant and refined than the regular uvee of Bougros with high-toned but reluctant citrus, stone and sea breeze aromas dissolving into powerful, focused and pure flavors that are precise and wonderfully intense plus offering the same impressive level of dry extract and an almost aggressively mineral and hugely long and very dry finish. I have always very much liked the character of this wine as it manages to pull off blending raw power with elegance and not losing either element in the bargain.

2006 William Fevre Chablis Fourchaumes
Usually $87.99 / Now $64.99
A subtle trace of wood frames elegant and pure of yellow and green fruit aromas nuanced by a touch of quinine and white flower that complements well the big, rich and full flavors that possess both power and real size plus a long mineral-infused finish. This is definitely a step up relative to what Fèvre usually manages to achieve with this vineyard but, not surprisingly, it can't quite match the class of the Montée de Tonnerre. Still, this is a great '06 by any definition and it's one that will definitely repay medium term aging.

2006 William Fevre Chablis Fourchaumes Vignoble De Vaulorent
Usually $91.50 / Now $66.99
A strikingly elegant and pure as white flower and green fruit notes waft from the glass to reveal full, powerful and sappy flavors that retain a fine sense of detail on the penetrating finish that is seriously long. What I like best about this wine though is the underlying sense of harmony because there's size and energy here in spades yet ultimately, it harnesses that to remain a wine of finesse if not delicacy. Absolutely gorgeous and a grand cru in all but name. BURGHOUND
