The Brut 2004, is from a very good Champagne vintage and it has had over 6 years on yeast lees in bottle. We are only shipping 5 cases.
The Brut Vintage 2004 is also made up of 100% Grand Cru Bouzy fruit; 80% pinot noir and 20% chardonnay. Hervé likes to use some chardonnay as he believes Bouzy pinot noir on its own has too much power and backbone, whilst the chardonnay adds a little softness and elegance. There is ample richness and concentration here, but Hervé does not put the base wines through malolactic fermentation, thereby keeping more life-giving acidity. This wine has now had over 6 years on lees!
