Possibly the most complex wine of the range on offer, it is made from 1/3 each of pinot noir, chardonnay and pinot blanc. 90% of the base wine was fermented and aged in Burgundy barrels (225 litres) followed by ageing in bottle for nine years. It is an intriguing example of the vignerons art, with round, filigreed and complete flavours of honey, small white flowers, nougat, lemon butter, spices and grilled nuts; and yet it possesses freshness and vitality. It is quite dry and well structured, yet mature and giving. RANDALL POLLARD
