Jean-Sebastian believes that this should be on lees for only two and a half years to preserve the fruitiness of the pinot noir, so it cannot by law be sold as a vintage (three years on lees), however it is all from 2007. It is fresh and quite dry (only 6 grams per litre of residual sugar), fruity but not lollyish, and beautifully balanced. RANDALL POLLARD
