After fermentation, the Sauvignon Blanc spends an extended period on yeast lees to impart a mild creamy texture. This also helps to maximise clarity by gravity settling to minimise filtration before bottling. A small percentage of Semillon provides the acid backbone with elegant grapefruit flavour to prolong freshness on the palate. Lychees, lemon and lime with subtle herbal notes and a flintiness seen in many Coonawarra whites. Arguably the regions most alluring variety. PETALUMA
